I understand it and I reject it. I am paying for food - not foam or cubes of jelly! I actually like leaving a restaurant feeling like I have eaten something other than air (which appears to be a large portion of what they are selling)
Ooh.. Foam. That's a contentious one for me. I was strongly on the "it's pointless and extravagant" side of the fence until this year, when I had a lobster foam on a risotto in Dubai. It was amazing. Now I'm conflicted.
So yeh, foam.

Foie Gras is utterly amazingly delicious. Must remember to get some next time I'm in France. Fresh Foie Gras lightly fried in Armanac or Calvados is the food of gods.
As for Michellin stars, the trick is to eat lunch as it is generally a lot cheaper.
As to the "I'd rather eat a burger, pie ect" fine. It's just like saying I only like music if its been on the X factor. A lovley combination of ignorance and inverted snobbery, and ever so English....
