Not familiar with those at all, but I think you want Garageband.

I take it you need some sort of hardware interface to use garageband on an iPhone?

Is it possible to plug in, and also have your headphones? Does iRig do that? That would be awesome

Not if you're just using it to build stuff up from the loop library, and/or recording with the built-in mic.

Before you laugh, the quality of the built-in mic is astonishing, for a phone.

    Yes.

Can you load your own samples into GarageBand? I'm after more of a sequencer where you can load samples and add effects then an app where you make your own loops

Not sure. So far I've only used it for recording vocals and guitar, and using the factory loops for quick demos.

Used my iphone garage band for the first time lastnight. Pretty good it was too. OK all I did was make a simple two chord backing track to practice some melodies over, but it worked a treat.
I used to be in a band you know, there was links and all sorts in this sig right here. But now all gone. Gone like ashes in the wind. Fuck it I was shit anyway.

There are lots of samplers and sequencers for iOS aside from Garageband. You could take a look at http://iosmusicandyou.com/ or http://www.iosmusician.com/ - loads of info on loads of apps and how they can be used for music creation on iPhone and iPad.
