I thought the EL84 sounded more like the 34 - it has more of that bright ringing crunch... the 6V6 is thicker and rounder. But I agree neither of them sound the same (obviously) or really *that* different - as John_A says, it's the circuit that really matters, which is why a standard 18W/2061 doesn't sound like a Plexi.
