You'll never get an archtop tone. The Stimer pickups are glorious in their own right, but certainly not for getting that Wes Montgomery sound. Stimer & 'Tit Bouche is the classic combination.

The "choice of champions" for a Grand Bouche is a Big Tone piezo (with an AER60 amp) - no volume control with this combination though - you'll need a volume pedal or something.

Godin, Ibanez Artcore, even Epi 335 would be a good place to look for budget jazz tones.

Not especially wide (43mm) but what do you really expect for a couple of hundred quid?
You get a quality archtop with decent pickups and a nice bridge.

I am a piano player with dinnerplate hands which can span 11 notes on the piano and play full jazz chords on an electro nylon I have an old Ibanez AS50 which is 20 years old and has the widest neck of any electro acoustic guitar so Ibbys are good. Suggest for a cheap solution Epi ES175 copies or Dots or 335 a likes or the new 339s which cost £295. Would also politely suggest that you are not going to get much of the sound you want under £300 or so secondhand

I love the sound of it with the blade humbucker as pictured, as it happens, it's just a wobbly and ugly solution.

Thanks for everyone's input though, I shall take on board the advice to continue not taking a drill or fret saw (see what I did there?) to it.

It is PRECISELY what I want.

Or rather, a Chinese replica of it for £50. £275 a bit too steep for me (else I would indeed be looking around for a new guitar).

Bit niche IMHO - might find something on Alibaba.com.

Mate of mine uses a Dupont Stimer with his oval hole maccaferri and it sounds incredible.
