How much of the existing finish (varnish???) do you have to sand off to get back to wood that will take a different finish successfully?

ISTR a N London luthier getting a huge stash of old mahogany when some pub's very old bar was dismantled (to allow for the inevitable winebarification). Not sure what decades of spilled booze did for timber timbre, but he was very happy.

its unusally thin actually - so shouldnt need more than 2mm of each side to be in the clear
