one of mine is the Faith parlor.

Very light, very responsive and quite full and loud for a small guitar. Uber fun and really easy to play - the ideal 'go to' grab guitar

Records superbly (according to the guitarist that mrs bert works with)

I am inclined to the view that there is not "one" acoustic. I have an electro nylon - a flamenco nylon - Yammy CPX900 and a Martin D15 brown thingy. They all do different things. Yammy sounds good through the amp but acoustically meh Martin to me is superb sound and arouses envy among pupils Also all to a budget

You seem to get a big jump once you start paying 4 figures. Anyone know of any ebony finger board models worth checking out?
Prefer ebony? The Yamaha L-series might be up your street then. The all-solid timber LL16 is within your budget (£630) and is a very, very nice guitar. Rosewood, Engleman spruce top, ebony fingerboard and bridge; plus you get a very decent case included.https://www.youtube.com/watch?v=Z9ThG7iDjRo
I have owned several L-series Yamahas including my current LL6. All have been superb in build quality, tone and playability. If you want something a little smaller than the LL, the LS sounds very similar.https://www.youtube.com/watch?v=xwHJhCULuSY

Found another local shop that sold faiths . I was quite impressed with a little parlour , Neptune I think. The tone was really balanced and the build quality looked great. Only problem was the short neck , 12 fretter, I know this is a feature of a parlour. It's possible that I might get use to it but I m quite a big fella and it felt very short . Is there 14 fret parlours?

As for the yamahas , they do look great spec wise. There's a demo of the ll36 which is probably the best sounding acoustic I ve heard.sadly they are priced sky high.
